Here is a link to my column in today's edition of The Spokesman-Review: Garden leftovers mean extended bounty. It came about from thinking how we go to all this trouble to grow veggies through the summer, but come harvest time, it can be difficult to know what to do with it. So I decided to write about how my husband Bill and I keep our harvest.
We do a combination of freezing, canning, drying and storing our vegetables and fruits so I'm hoping the information will be helpful to you.
It's hard to believe harvest time is upon us already, isn't it? Sometimes, I feel a bit overwhelmed by all of the work that goes into preserving the harvest but I do know this: in the dead of winter, when it's very cold and the wind is howling outside, it sure is nice to have a tasty meal made from the vegetables and fruits we took the time to grow and preserve! And that, my friends, makes it all worthwhile.
